We've always love Salt & Pepper dishes specifically when dining in a Chinese restaurant. We make it point and most of the time, ordering this dish is a must. Why not try at home, and discover how easy it is to prepare this right in your own kitchen?
Ingredients:
Cut in cubes and mix with salt & pepper the following (the more the merrier!)
White Onions
Green Bell Pepper
Red Bell Pepper
Green Chilies (the long ones, you may add more for your desire)
Add in minced ginger (few pinches)
Add Cornstarch and potato starch into cut veggies and fry everything in medium heat
-once well done and a bit crunchy, drain oil and set aside (strain, do not use kitchen paper towel please)
Fry minced garlic separately (in medium heat until it turns brown, do not over cook) and mix with fried veggies, set everything aside and make sure you drain/strain them and save these for garnishing.
Wash prawns or shrimps (please cut antennae /antennule)
Devein (optional)Add white wine 1tbsp( Chinese cooking wine)Dredge in 1:1 cornstarch starch and camote powder or potato starchAdd saltPepper of course
Fry shrimps/prawns in preheated oil (oil from veggies and garlic, make sure you strain them) for about 2-3 minutes
Make sure you fry them well (do not over cook), strain oil
Place fried shrimps in a serving dish, garnish with veggies then serve hot.
